Beef Nihari — نہاری
A rich, slow-cooked beef stew traditionally eaten at breakfast, with a deep spiced gravy thickened with flour and finished with ginger, lemon and green chillies.
Ingredients
- 1 kg beef shank, on the bone
- 1/2 cup oil or ghee
- 2 onions, sliced
- 2 tbsp ginger-garlic paste
- 3 tbsp nihari masala
- 1/2 cup wheat flour, for thickening
- Ginger julienne, lemon, coriander, to serve
Method
- Brown the onions in oil, add the beef and ginger-garlic paste and fry.
- Add nihari masala and water, then simmer on the lowest heat for 3–4 hours until the meat is falling apart.
- Mix the flour with water into a smooth slurry and stir it in to thicken the gravy.
- Serve topped with ginger, lemon and coriander, with naan.
